And the cattle absolutely loved it, especially under the chin in their special spot. ![]() Because of these two factors, many of her cattle love to be groomed and pampered regularly. Highland cattle are known to be a very docile breed and Janet also shows some of her herd. Time For Some PamperingĪfter we moved and discussed the cattle, it was time for some love and care. In beginning, they gave out tons of samples because they truly believe in the difference in taste and marbling of Highland cattle beef. Now, they sell to a large customer base with a majority of their customers within 40 miles of where the beef was raised. At first, they sold their beef at farmers’ markets. Highland beef is meat that is lean, well marbled and flavorful with little outside waste fat (they are insulated by long hair rather than a thick layer of fat). Today’s consumer prefers lean, premium meat, and the Highland beef is ideally suited to meet this demand. Despite long horns and an unusual appearance, Highlands are even-tempered, bulls as well as cows. These cattle are excellent browsers, able to clear a brush lot with speed and efficiency. They also adapt well to more southerly climates with successful herds as far south as Texas and Georgia. They are raised as far north as Alaska and the Scandinavian countries. Cold weather and snow have little effect on them. Highlands require little in the way of shelter, feed supplements, or expensive grain to achieve and maintain good condition. It is one of the oldest purebred cattle breeds in the world, extremely hardy and first developed on the cold north Atlantic coast of Scotland. Highland (sometimes called Scottish Highland) is a distinct breed of cattle that are generally smaller than Angus and unique in their looks because of their long hair and horns. ![]()
